Demoiselle Matilda Absinthe is our award winning Australian absinthe featuring the Australian Natives: Mountain Pepper (Pepper Berry) and Lemon Myrtle alongside the traditional absinthe 'holy trinity' of aniseed, fennel and wormwood.

Produced in the traditional process of pot distillation followed by a colouration (that also adds more flavour), just as absinthe was being produced during the 1800's.

All of our absinthe is made in the traditional method using whole herbs we grow, as such every year's absinthe is different. The flavour, colour and louche will change, so we include a louching video for the current year's absinthe that you are purchasing, the absinthe is louched to a finished ratio of 3:1 water:absinthe using room temp absinthe (~15 degC) with iced water.
