Demoiselle Distillery Est. 2012, creating Absinthe and Gin alongside other select small batch spirits located on the Barrington Coast NSW Australia.

Everything is done in house, making the alcohol we use to create our spirits, growing our own botanicals for Absinthe and Gin, including the wormwood we have a range of fruit trees we use to create seasonal small batch gins.

Crafting traditional French and modern Australian style absinthe, both award winners. All featuring the 'holy trinity' of absinthe herbs: aniseed, fennel and wormwood. The French style is made just as it was in mid 1800's France using the original botanicals.

Our classic gin won silver in the 2020 Australian Gin awards against 250 other entrants in the most contested category: Classic Dry Gin.
